Carlo Gionti began his career as a baker in the early ‘900s.

Upon his death in ’83, the business was taken over by his son Bartolomeo, known as Lucio, who revolutionized the place, which had already been a bar for years, becoming a pub, then a literary café and a concert café, offering food, drinks and music.

Around the 2000s, the restaurant business began, opening for lunch.

Today, the Kassaro café is also managed by Lucio's son, Carlo, who studied entrepreneurship and seeks to preserve traditional Sicilian cuisine by investing in quality and innovation.
