The grandparents' dairy in the ’40s was transformed by their children into an ice cream shop and bar and, later, a pastry shop. From ’75 here is Mr. Cappello's professionalism. His son Giovanni also shares the same spirit as the Italian Pastry Academy: by statute, they exclude substitutes, semi-finished products, and anything from industry. As an example, I would like to point out candied orange and lemon peel covered in dark chocolate and Settestrati (or Setteveli).
